Is there a way to change the background image that's on the bottom left, behind the phase selection buttons and phase images?

Yes. In the skins preferences you can select an image file.

Sweet.... also any way to get rid of the blue plus sign/crosshairs in the middle of the table?

Not at present. I have it there so people know where the center is.
